Ingredients
- 180 g lukewarm water
- 200 g grape molasses (petimezi)
- 180 g sugar
- 60 g brandy/ cognac
- 250 g seed oil
- 200 - 220 g mini black raisins
- 1 pinch salt
- 1 tsp soda
- 1 & 1/2 tbsp cinnamon
- 1 tbsp clove powder
- 1 tbsp cocoa powder
- 1000 - 1100 g all - purpose flour
- 60 g baking powder
How to
- In a large bowl, add the lukewarm water and the grape molasses and mix with a hand whisk until the molasses dissolves.
- Add the baking soda while stirring. Continue with the seed oil, salt, cinnamon , cloves and cocoa powder.
- Add the brandy and the raisins.
- Sift the flour, add the baking powder and pour them to our mixture, stirring and then kneading until our flour is absorbed. No more!
- Shape into ropes (38 - 40 g each) and join the edges together to form a circle.
- Transfer to a baking tray lined with parchment paper and bake in a preheated oven at 340 oF - 170 oC for 18 min.
- Allow to cool on a wire rack and store in an airtight container.
Note from Greek jar:
These grape must cookies are kind of crunchy on the outside and soft on the inside. If you want them to be softer, reduce the cooking time a bit. For crispier moustokouloura, you can increase the cooking time and it would be better to shape the ropes thinner.
