Ingredients

  • 180 g lukewarm water
  • 200 g grape molasses (petimezi)
  • 180 g sugar
  • 60 g brandy/ cognac
  • 250 g seed oil
  • 200 - 220 g mini black raisins
  • 1 pinch salt
  • 1 tsp soda
  • 1 & 1/2 tbsp cinnamon
  • 1 tbsp clove powder
  • 1 tbsp cocoa powder
  • 1000 - 1100 g all - purpose flour
  • 60 g baking powder


How to

  1. In a large bowl, add the lukewarm water and the grape molasses and mix with a hand whisk until the molasses dissolves.
  2. Add the baking soda while stirring. Continue with the seed oil, salt, cinnamon , cloves and cocoa powder.
  3. Add the brandy and the raisins.
  4. Sift the flour, add the baking powder and pour them to our mixture, stirring and then kneading until our flour is absorbed. No more!
  5. Shape into ropes (38 - 40 g each) and join the edges together to form a circle.
  6. Transfer to a baking tray lined with parchment paper and bake in a preheated oven at 340 oF - 170 oC for 18 min.
  7. Allow to cool on a wire rack and store in an airtight container.

Note from Greek jar:

These grape must cookies are kind of crunchy on the outside and soft on the inside. If you want them to be softer, reduce the cooking time a bit. For crispier moustokouloura, you can increase the cooking time and it would be better to shape the ropes thinner.
