Ingredients
- 1 kg watermelon (cleaned, outside cut into sticks)
- 800 g granulated sugar
- 2 cinnamon sticks
- 1 sprig of rose geranium
- Juice of 4 lemons
How to
- Remove the outer green skin and leave a little of the inside of the watermelon for its beautiful red color. Cut into sticks.
- In a bowl with water and the juice of 3 lemons, add our sticks and leave them in the fridge for 8 - 24 hours.
- Strain them, put them in a wide pot, add the sugar and boil on low heat for 20 min. If necessary, remove the foam.
- The next day we add the cinnamon and the juniper root and boil our dessert until it sets. In the last boil, pour the juice from one of our lemons.
Note from Greek jar:
Old recipes mention the use of lime water to keep the watermelon crisp. Soak the sticks in lime water for 2 - 3 hours and then rinse very well!!!! I avoid this and have found that my spoon sweet is quite crisp without the use of lime water.
