Ingredients
- 1500 g quince, peeled and cut into sticks
- 1700 g sugar
- 900 g water
- 2 - 3 sprigs of rose geranium
- 100 g roasted almonds, without the skin
- Juice of 3 lemons + 4 tbsp for the final boil
How to
- In a bowl with water, add the juice of the 3 lemons and while you are cutting the quince, put the sticks in the water. The water should cover them.
- Put the sugar and water (900 g) in a saucepan and boil for 10 min.
- Drain the quince and carefully add it to the saucepan.
- Boil for 15 min, removing the foam if necessary.
- Leave the spoon sweet in the saucepan for 24 hours.
- Add the almonds and rose geranium sprigs and boil for about 30 min or until it sets.
- At the last boil, add the lemon juice (4 tbsp).
- Remove the rose geranium sprigs, transfer to sterile jars and store in a cool, dark and dry place.
Note from Greek jar:
The sugar in some spoon sweets, such as quince, is good to overwhelm the fruit. Don't mind! The extra amount doesn't add sweetness, it gives us the syrup we need to preserve our spoon sweet properly.
You can add more almonds if you like.
The color of our spoon sweet depends both on the boiling time and on our quince.
