Ingredients
- 300 g mizithra in crumbs
- 100 g feta cheese in crumbs
- 2 eggs
- 1 large tomato, cut into cubes
- 20 - 25 olives, coarsely chopped
- 2 roasted Florina red peppers, cut into strips
- 1 bunch of mint, finely chopped
- 1/2 tsp salt (more or less, depending on the cheeses you choose)
- Fresh ground pepper
- 2 sheets puff pastry (2 x 400)
How to
- Combine the first 8 ingredients in a bowl.
- Spread half of the filling on each sheet of puff pastry, roll up starting from the wider side of the sheet and wrap in plastic wrap.
- Refrigerate for about 2 hours.
- Cut the rolls into 2 - 3 cm slices and transfer to a baking tray lined with parchment paper. A spatula is helpful at this stage to hold the filling together during transfer.
- Bake in preheated oven (set to fan) at 355 oF - 180 oC for about 25 min and enjoy them warm or cold.
Note from Greek jar:
Florina peppers are so unique! If you can't find them where you live, you could substitute them with Romano peppers or red bell peppers.
