Feta, a treasure of Greek cuisine

Feta cheese, with its crumbly texture, spicy touch, and versatility, proudly symbolizes Greek culinary excellence. Renowned worldwide, this cheese has a rich history deeply rooted in Greece’s traditions and holds a special place in the hearts of those who love authentic flavors. Its modern name comes from the Latin word "fetta," reflecting the traditional method of cutting the cheese into slices for consumption. During the Byzantine era, there are references to feta as "prosphatos."

The production of feta involves a meticulous process that reflects the artisanal craft passed down through generations. Traditionally made from sheep’s milk or a combination of sheep’s and goat’s milk, the milk, usually sourced from local farmers, undergoes careful pasteurization before the addition of bacterial cultures and rennet. The curd is then cut, drained, and left to mature in brine, creating feta's characteristic texture and flavor.

In 2002, the European Union definitively granted feta Protected Designation of Origin (PDO) status, recognizing it as a product deeply linked to the geographic region of Greece. This designation ensures that only cheese produced in specific regions of Greece, using traditional methods and local milk, can be marketed as authentic feta.

Feta boasts a unique flavor profile that pairs excellently with a variety of accompaniments, combining the creamy taste of sheep’s milk with a spicy element. Olive oil, fresh herbs, and ripe tomatoes enhance its flavor, while honey offers a delightful contrast with its sweetness. Whether crumbled over barley rusks with grated tomato (the beloved Cretan dakos), wrapped in phyllo dough, or incorporated into the filling of a traditional spanakopita, feta elevates the culinary experience with its distinctive character. It also pairs wonderfully with fine Greek wines.

In the world of cheeses, feta stands as a testament to the authenticity, simplicity, and depth of Greek cultural heritage. So, the next time you find yourself in the kitchen, let the charm of feta inspire your culinary creations and embark on a flavorful journey to the heart of Greece. If you’re among the lucky ones visiting this beautiful country for summer holidays, immerse yourself in Greek gastronomy and enjoy feta in various forms, accompanied by good company, a summer mood, and gazing at the endless blue of the Greek seas.
