Ingredients

  • 500 g all - purpose flour
  • 1 sachet dry yeast (8 g)
  • 1 tsp sugar
  • 1 tsp salt
  • 330 g lukewarm water
  • 5 tbsp olive oil
  • 150 - 200 g crumbled feta cheese
  • 2 tbsp chopped mint
  • Vegetables and herbs of your choice for decoration

How to

  1. Dissolve the yeast and sugar in lukewarm water.
  2. Add the flour, salt and finally the olive oil, kneading until you get an elastic dough.
  3. Cover the dough and allow it to double in volume.
  4. When it "rises", add the feta cheese and mint and knead until incorporated.
  5. Roll out the dough with the palms of your hands and spread it on a greased or lined pan with parchment paper.
  6. Let it "rise" for 30' and decorate it with vegetables and herbs of your choice.
  7. Bake in preheated oven (set to fan) at 355 οF - 180 οC for 30' - 35'.

Note from Greek jar:

Focaccia is best enjoyed while still warm.

Tip:  The dough of the recipe was divided into a 30 x 35 cm baking pan and three individual ovenproof pans. You will create your own unique greek style focaccia by choosing the utensils, the vegetables and herbs you like. If you prefer it thin, choose a larger pan.
