Ingredients

  • 3 eggs
  • 220 g brown sugar
  • 150 g olive oil (you can use seed oil as well)
  • 90 g yogurt
  • 1 tsp cinammon
  • 1/2 tsp clove powder
  • 50 g brandy(if you make this cake for kids, you can avoid alcohol)
  • 100 g all - purpose flour
  • 130 g carob flour
  • 15 g baking powder
  • 120 g coarsely chopped walnuts

How to

  1. In a mixer's bowl, beat the eggs and sugar until fluffy.
  2. Add the olive oil and yogurt.
  3. Add the cinnamon, cloves and brandy.
  4. Sift the flours and, along with the baking powder, gradually add them to the mixture.
  5. Keep beating and once incorporated into the mixture, add the walnuts and simply mix them in, by reducing the mixer to low speed or using a spatula or a whisk.
  6. Transfer to a greased and floured cake mold (24 cm diameter)
  7. Bake in a preheated oven (set to fan) at 355 οF - 180 οC for about 40 - 45 min.
  8. Let it cool for 10 min, unmould and let it cool completely.
  9. Decorate with icing sugar and walnuts.
