Ingredients
- 3 eggs
- 220 g brown sugar
- 150 g olive oil (you can use seed oil as well)
- 90 g yogurt
- 1 tsp cinammon
- 1/2 tsp clove powder
- 50 g brandy(if you make this cake for kids, you can avoid alcohol)
- 100 g all - purpose flour
- 130 g carob flour
- 15 g baking powder
- 120 g coarsely chopped walnuts
How to
- In a mixer's bowl, beat the eggs and sugar until fluffy.
- Add the olive oil and yogurt.
- Add the cinnamon, cloves and brandy.
- Sift the flours and, along with the baking powder, gradually add them to the mixture.
- Keep beating and once incorporated into the mixture, add the walnuts and simply mix them in, by reducing the mixer to low speed or using a spatula or a whisk.
- Transfer to a greased and floured cake mold (24 cm diameter)
- Bake in a preheated oven (set to fan) at 355 οF - 180 οC for about 40 - 45 min.
- Let it cool for 10 min, unmould and let it cool completely.
- Decorate with icing sugar and walnuts.
