Ingredients
- 500 g mandarin peels
- 1000 g granulated sugar
- 500 g water
- Juice of 1 lemon
How to
- Choose some fresh mandarins with firm and nice peel.
- Wash them under clean running water and wipe dry.
- Cut the top and bottom ends. Using a knife slice the mandarin peel in half, then quarters, then eighths - top to bottom (It always depends on the size of the fruit).
- Remove the peels very carefully. Wrap them and pierce them with a toothpick.
- Put the peels in a pot with boiling water and boil for 5 mins to remove their bitterness. Drain the water and follow the same process using clean water for 2 more times, depending on the bitterness of the rind.
- Drain and rinse with cold water. Remove the toothpicks and place the mandarins on paper towel.
- In a pot add the water (500 gr.) and the sugar and boil them on medium heat. When it reaches the boiling point, put carefully the wrapped peels.
- Boil them for 15 min. Let them cool, put a lid and leave them in the pot for 24 hours.
- Boil them for 10 - 15 min or until it sets. Add the lemon juice at the last minute.
- Let it cool and transfer to sterile jar.
