Ingredients

  • 500 g mandarin peels
  • 1000 g granulated sugar
  • 500 g water
  • Juice of 1 lemon


How to

  1. Choose some fresh mandarins with firm and nice peel.
  2. Wash them under clean running water and wipe dry.
  3. Cut the top and bottom ends. Using a knife slice the mandarin peel in half, then quarters, then eighths - top to bottom (It always depends on the size of the fruit).
  4. Remove the peels very carefully. Wrap them and pierce them with a toothpick.
  5. Put the peels in a pot with boiling water and boil for 5 mins to remove their bitterness. Drain the water and follow the same process using clean water for 2 more times, depending on the bitterness of the rind.
  6. Drain and rinse with cold water. Remove the toothpicks and place the mandarins on paper towel.
  7. In a pot add the water (500 gr.) and the sugar and boil them on medium heat. When it reaches the boiling point, put carefully the wrapped peels.
  8. Boil them for 15 min. Let them cool, put a lid and leave them in the pot for 24 hours.
  9. Boil them for 10 - 15 min or until it sets. Add the lemon juice at the last minute.
  10. Let it cool and transfer to sterile jar.
